Today, I am going to discuss about brief history, price, cooking methods of beef, especially the short ribs.
Also I would like to share a Korean recipe to cook Galbitang, which is clear beef short ribs soup.
The reason I choose beef short ribs for today is because I really want to share other cooking methods that people cook in Korea.
Recently, I just learn how to braise the short ribs from George Brown College and this is not the only method that you can cook with short ribs and hope you get to learn new methods from my post.

History of beef in Canada starts about 300 years ago from Europe and now there are over 5 million beef cattle on ranches across the Canada.
Beef is the name given to meat obtained from the carcasses of cattle.
Also, it takes very important part of the Canadian economy because Canada exports the beef to the world.

How Much Does It Cost?
I purchased my beef short ribs from retail grocer "Metro" in Canada.
There are 2 reasons I went to Metro to purchase the short ribs.
First, I wanted to check if they actually have the same beef short rib cuts as in Korea.
Second, I was more interested to see the price for the retail grocer instead of butcher shop because the retail grocer is more commonly used for customers.

How to Utilize and What Kind of Cooking Methods Can Be Used?
First of all, I was really surprised, because sliced short ribs were almost same as one that sells in Korea.
One of the best way to utilize beef short ribs you can braise and make sauce while cooking the short ribs by deglazing the pot with red wine and adding beef stock.
And also you can make beef stock to make soup from beef short ribs.
Beef short ribs might cost little high but they are great because there are nothing to waste from this part.
One of the most common cooking method for short ribs is braising.
Because short ribs have many connectivity tissues and they get tough when they are cooked so you want to make sure to break it down by braising and also brings deep and full beef flavour while braising.
However, many Koreans love to grill marinated short ribs with charcoal rapidly and this food is called Galbe.
Galbe is one of the traditional food in Korea which is marinated short ribs.
People love to marinate the short ribs with soy sauce, green onions, onions, sugar, minced garlic, ginger, and juice from Asian pear.

It is very important to use the juice from Asian pear (or kiwi) because it contains protease which breaks protein in the beef to tenderize while the beef is marinating and also gives natural sweetness to the beef.
Also clear beef short rib soup (Galbitang) is one of the most famous and traditional meal in Korea and I will discuss more about this next with recipe.
